Our business began when, not content to just taste whiskey, we set about to make it. Over the years, we've been joined by similar contrarians who likewise reject conventional wisdom and go by trial-and-error, sensory-led processes that make better whiskey off the still, and even better aged whiskeys.
Moonshine is a big part of the culture of the Appalachian mountains, and it began as a tax dodge when the services provided by government weren’t worth very much to its constituents. That was true for the whiskey rebels of Pennsylvania, the whiskey-making denizens of Irishtown Brooklyn in the early 1870s, and the moonshiners of Appalachia in the later part of the 20th century.
It’s also a safe and satisfying hobby that should be legalized, a position we’ve long argued and hope that the Federal government might soon repeal. There is a state law challenging this, the last prohibition, in Texas, and it’s possible more states will follow.
